Mosu Hong Kong
Helming the highly anticipated Hong Kong off-shoot of two MICHELIN starred Mosu Seoul, Korean Head Chef Shim JungTaek steps up to the role with a wealth of experience under his belt.
Chef Shim owes his native fluency in Japanese to his 12 years spent in Japan, which included experiences working in the likes of one MICHELIN starred Restaurant Sant Pau in Tokyo for 3.5 years, Michel Bras Toya Japon in Hokkaido for 2 years and finally working at the Tokyo’s legendary three MICHELIN starred Quintessence for 3 years. Shim was then recruited by Chef Sung Anh to join the Mosu Seoul kitchen brigade as Sous Chef, where his internationally acquired skills blended seamlessly with Mosu’s unique and original identity of innovative Korean cuisine.
Now as the Head Chef of Mosu Hong Kong, Chef Shim will work closely with Chef Sung Anh to retain the strong originality and authenticity of Mosu Seoul, while promoting a “slow evolution” of the cuisine to incorporate more local seasonal ingredients and cooking techniques.
